Handmade rosemary honey
Rosemary honey comes from the homonymous aromatic woody shrub Rosmarinus officinal. The rosemary although it belongs to the bush category, can reach 2m in height. Very easy to grow, it can grow in almost any type of soil, it has small, very aromatic green leaves.
Rosemary honey has a very light color and its aroma is very soft with floral touches. It has a thick texture, and a sweet taste with some small acid touch depending on the flowering area and the weather conditions in the area. It crystallizes in a very fine way, becoming a whiter shade in this process.
It is considered the most elegant honey, and is one of the most popular bee products in Spain. Together with lemon honey, it is one of the honeys indicated for children and people who have never tasted honey, due to its softness and sweetness.
Rosemary honey La Carrasqueta, is a raw honey of 100% natural origin, without pasteurization or adulteration, so it retains all the benefits of honey. It is handcrafted by small beekeepers in the Valencian Community (Spain).
Rosemary flower
Rosemary is a very common evergreen aromatic bush of the Spanish Mediterranean coast, although we can also find it in the central and southeast areas of the peninsula. It can grow in areas at sea level, such as on land at 1500m altitude.
Its flowering usually occurs in spring and autumn. Its aromatic flowers of white, blue and violet tones much appreciated by bees. Therefore, the usual harvest time is usually March and April, although being an evergreen shrub, its production although to a lesser extent is maintained throughout the year.
In addition to the production of honey, the rosemary plant is a very common aromatic herb in Mediterranean cuisine. It usually accompanies rice, gazpachos, stews and sauces, giving them an unmistakable aromatic touch.
Uses rosemary honey
Rosemary honey is an excellent sugar substitute for its sweet taste and its beneficial properties. We can use it to season a yogurt, such as topping on a flan, or simply when making a cake.
We can also use it to accompany infusions, milk, coffees, etc.

Conservation tips
Store in a cool, dry place. Due to its purity this honey tends to crystallize, this natural process can be avoided by heating the water bath.
