Thyme honey from Spain
Thyme honey, or farigola or timó honey, as is known in Catalonia and the Valencian Community respectively, comes from one of the Mediterranean aromatic herbs par excellence: thyme. Although, in reality when we talk about thyme, we cannot speak of a species in itself, but we are facing a herb of the thymus genus, formed by more than a thousand different species. Their respective species are easily found in Mediterranean countries such as Spain, France, Italy and Greece. In Spain we can find it especially in the Valencian Community and Andalusia.
Thyme honey is one of the natural honey most appreciated for the uniqueness of its properties, thyme goes far beyond an aromatic plant widely used in cooking and medicine.
Its collection date is usually at the end of spring and at the beginning of summer.
Its color may vary from light amber to darker depending on the variety of thyme present in each area. In our case, the Valencian Community, thyme honey usually has a light amber color. It has a very peculiar intense floral aroma, which obviously reminds us of the smell of the thyme plant. Its flavor is sweet, but delicate at the same time, with a very particular touch of acidity. Its crystallization is very weak.
Like all our honey, La Carrasqueta thyme honey is a raw honey of 100% natural origin that has not been adulterated or pasteurized, so it retains all the properties of honey.

As we have said before, thyme honey is a honey that, apart from its gastronomic value, has multiple properties and health benefits. In this sense, the Greeks (Ancient Greece) were the first to discover the therapeutic properties of thyme as a medicinal herb, as well as the benefits of their honey.

Uses thyme honey
Thyme honey is an excellent honey to accompany with an infusion after eating, since as we said before it is an excellent digestive.

Store in a cool, dry place. Due to its purity this honey tends to crystallize, this natural process can be avoided by heating the water bath.
