The Nougat of Snow or also known as Nougat of Marzipan or Nougat of Limon, is one of the most typical nougat in Jijona, however it is not well known or easy to find in the rest of Spain. In its origins it was a nougat that was not commercialized, but was made for own consumption by the factory workers themselves.
If you still do not know this Jijonenca delight, you should not miss the opportunity to try it, since it is a nougat that by the combination of the best marzipan with the touch of lemon and cinnamon, makes it truly irresistible.

The nougat of snow is a classic of the Bakery Nougat. It is usually sold in nougat bar format, although it is also possible to find it in the form of pineapple, such as what is known as "snow pineapple" or "marzipan pineapple". However, this format will normally only be found at Christmas fairs and similar events, since it is a product of immediate consumption, therefore it is more difficult to find in stores.
Why Snow Nougat?
It is called Snow nougat due to the characteristic white color that Marcona Almond gives (50%) WITHOUT TOWING (unlike Jijona nougat or Alicante nougat where it is toasted) that is used to make it.
How is Snow Nougat made?
As we have said before, raw marcona almond is crushed for its elaboration and mixed with the sugar to later add a little lemon zest and cinnamon.

Natural Marcona almond (50%), sugar, lemon scrape, cinnamon and conservative E-200.
